Shrimp Ceviché

Have you ever taken a bite of something, and it brought you immediate nostalgia? Maybe it reminded you of a special person, or a vacation. To me, this citrusy ceviche takes me straight to South Beach. Let’s be honest, this fresh snack is exactly what you need for this weekend’s Floridian Super Bowl!

Like most recipes I share, this one is pretty simple!

Here’s what you’ll need:

  • 1 cup medium frozen shrimp, defrosted, deveined, tails removed

  • 1 firm, but ripe avocado

  • 2 fresh jalapeño peppers (remove seeds for less spicy flavor)

  • 1/2 cup diced cherry tomatoes

  • 2 Persian cucumbers, diced

  • Juice of 1 lemon

  • Juice of 1 lime

  • 1 small shallot, finely chopped

  • 1 tbsp. of olive oil

  • Heaping handful of fresh cilantro

  • salt and pepper to taste

Step 1

Combine the juice of both the lemon and lime in a large bowl. Chop shrimp into bite size pieces, and add them to the bowl.

Step 2

Add diced cucumber, tomato, shallots, and jalapeños. Carefully chop avocado into cubes, and toss into the bowl. Clap the cilantro in your hands (this brings out the flavor!), and finely chop it. Generously sprinkle the cilantro throughout the bowl.

Step 3

Drizzle olive oil, and season with salt and pepper to taste. Combine all ingredients, and serve cold with tortilla chips!
