Greek Protein Bowl

Mediterranean flavors may just be my all time favorite! Justin asked me to whip up something healthy, but filling, and I knew this would fit the bill! This recipe has major flavor, along with a variety of textures that make it the perfect “boost” meal.

If you’re looking for a fresh way to start off the New Year…

Here’s what you’ll need:

  • 1 lean chicken breast

  • 1 cup combined butter lettuce and radicchio (mix is available at Trader Joe’s)

  • 1/4 cup cooked quinoa

  • 1/4 cup diced Persian cucumbers

  • 1/4 cup diced green bell pepper

  • 1/4 cup chickpeas

  • 1/4 cup diced grape tomatoes

  • optional 2 tbsp. diced shallots

  • Fresh feta cheese in the brine

  • Kalamata olives

  • Za’atar seasoning

  • salt and pepper

  • olive oil

  • 1 tsp. dried oregano

  • 1/2 fresh lemon

  1. Add lettuce to a salad bowl, and evenly sprinkle the cooked quinoa on top. I roasted my chickpeas with olive oil and salt & pepper in the oven on 450 for 15-20 min. If you like them crispier, you can always use the broil setting! While these are in the oven, start on the chicken breast.

  2. In a medium sized frying pan, add about a tablespoon of olive oil. Season chicken on both sides with za’atar seasoning, oregano, and salt & pepper. Cook evenly on both sides.

  3. Next, add cucumber, chickpeas, tomatoes, green pepper, olives, and shallots. Top with fresh crumbled feta cheese. Squeeze lemon juice over the entire bowl, and drizzle with olive oil or dressing of your choice.

Wishing you all a very happy and healthy New Year, from Justin and myself. 2020 was certainly not what any of us expected, and yet we still leave this year behind with incredible memories to move forward with. They may not be filled with travel, or adventurous experiences like most years, but that’s the beauty of it. This year brought me Junk In Love, and all of you! 2020 has taught me to try to see the good in everything.

The Junker Fam will begin 2021 moving into our new home. We are so excited, and can’t wait to share moving tips, and all of our home decor inspiration. But for now, we’re eating Greek protein bowls surrounded by cardboard boxes! Here’s to fresh starts, and new adventures in 2021.
