Chocolate Toffee Ice Cream

If you asked me what one food, specifically indulgence, I couldn’t live without, it would have to be ice cream! As most of you know, Justin has such a sweet tooth, and we almost always have a pint of ice cream in our freezer. That was, of course, until my mother gifted us a Cuisinart to make our own at home. She and I share our love for cooking, and often gift each other little kitchen items back and forth.

Today’s recipe kind of happened by accident! I planned to make chocolate ice cream with some sort of chips or candies mixed in, however, I peeked in our pantry and realized I still had chocolate covered pretzels, and decided to throw them in the mix! Making ice cream from scratch at home is easier than you’d think, and doesn’t take much time at all.

Here’s what you’ll need:

  • Ice Cream Maker

  • 2 cups heavy cream

  • 1 cup whole milk

  • 3/4 cup granulated sugar

  • 2 tablespoons unsweetened SIFTED cocoa powder

  • pinch of kosher salt

  • 1 tsp vanilla extract

  • chocolate syrup optional

Step 1

Whisk together milk, cream, sugar, salt, vanilla, and cocoa powder until well combined.

Step 2

Carefully pour mixture into the cold prepped ice cream maker. Allow the mixture to churn for 20 minutes, or until thicker, frozen consistency is achieved.

Step 3

Crush the chocolate covered pretzels, or mix in of your choice into bits. Ideally, these pieces should be the size of chocolate chips or smaller. Add to the ice cream maker along with a drizzle of chocolate syrup. Allow to churn an additional 5 minutes.

Step 4

Transfer ice cream to a freezer safe container, and sprinkle with crushed English Toffee Bits. Freeze until firm, or desired consistency is reached.
